Pita Veggie Pocket

Tomorrow is the day!  The first day of operation home lunch.  Which means lots of preparation has to be done tonight.

Jeffrey chose the Pita Veggie Pocket for his first experiment.

And then, we went grocery shopping.

And I forgot to buy the pita pockets.

So, I got home, and made them into wraps.

I got half a cup of cream cheese and mixed in some rosemary, basil and other spices.  I then set it aside and chopped up some veggies.

Today we had zucchini, broccoli, tomatoes, onions, and spinach.  I tossed them in a little bit of olive oil and put the veggies in a frying pan.  I tossed them around a bit until they were slightly soft and vibrantly colorful.  Then set them aside for a moment.  I spread some of the cream cheese concoction onto two whole wheat tortillas and then placed them together, like a sandwich.  I did that so they would store well until tomorrow.

I put the veggies in a Tupperware so Jeffrey could put it together tomorrow without the tortilla going soggy.  He also gets some grapes, a carrot, and some peanuts.  I think it is a good meal.  I really hope he enjoys it as well.

Sadly, no picture as I didn't put it together for him.  In hindsight, I probably could have taken pictures along the way, but I was just focused on getting it done so I could finish things up (aka this post) and go to bed.  I will let you know what he thinks about it tomorrow.
